Mexican Chorizo Meatloaf

It takes 26 ingredients and a fair amount of chopping, but the results are more than worth the effort. The meatloaf itself is delicious, but it's the salsa-glaze that makes it special.  Be sure to put a cookie sheet below the baking dish as it's cooking, or as we learned the hard way, you'll be cleaning your oven.
