The noodles are steeped in boiling water for about 20 minutes while you make a cheese and herb spread that's kicked up with lemon zest. Then, one at a time, you lay a noodle down, spread the cheese mixture down its center and roll it up. Pour half the tomato sauce on the bottom of a baking dish, line up the lasagna pointed up, and finish with the rest of the tomato sauce.
