A friend that owns a local Italian deli turned us on to candy onions and Chef Elaine used one last summer while making a delicious sheet of roasted vegetables. They are also great for onion rings and gratins and are the best onion for frying. I'll add one next summer to a classic Bacon, Lettuce, and Tomato and make a BOLT.
