Beef Wellington is made with beef tenderloin, a reduction of mushrooms, shallots, and thyme (called a duxelle), prosciutto, and puff pastry. It's not a recipe we've attempted to make at home, but when we see it on a menu (not often) at a reasonable price (very not often), like the one shown below we had at Walnut Grove Country Club, we order it in a heartbeat. It did not disappoint.
