We've eaten a lot of quesadillas, but this one my wife made last week is a "can't-stop-to-chew-completely" marvel. The shrimp, mayonnaise, roasted red pepper and cilantro are awesome, but the pepper jack cheese is the star of the show. Better have a couple extra ready to go, they're that good.
Tip: Don't keep the cheese in the freezer longer than specified, or the result is a lot more work. Brought to you by the "been there, done that" school of hard knocks.
