This chicken stew gets a kick from its onion, cumin, fire-roasted tomatoes, and chipotle chiles in adobo sauce. It makes a great addition to your slow-cooker recipe rotation. You can either serve on tortillas or just ladle a good-sized portion (last picture), then top either way with cheese, avocado, and cilantro.
