Before our local fruit stand shut down for the season, Chef Elaine made a half-recipe of this delicious cheesy creamed corn. The cheesy comes from the pecorino (sheep in Italian) and the creamy from the mascarpone and half-n-half. The topping is yummy fried prosciutto. The only change she wants to make come next July (when the fruit stand reappears) is cutting the half-n-half in half to make it a bit thicker.
