Instead of just adding cheese to my leftover chicken filling, I opted to try a technique I recently saw on TV. I put down a layer of shredded cheddar cheese, covered it with a flour tortilla, and added the filling. I cooked this over medium heat for several minutes until the cheese was nicely browned. The next time I do this, I'll microwave the filling first to make it hotter. Every time I make something for the first time, there are always lessons learned.
