Convection Oven Chicken

The bird below is the juiciest version of a whole roast chicken I've ever had, the benefit of using our convection oven feature.  Just a little softened butter, salt, and pepper inside and out and perch the bird on a wire rack to get the swirling hot air on all sides.  It takes a little less time and temperature than the conventional radiant heat alternative.  Read about the details at the link.
