Smoked Pork Chops

These smoked pork chops we bought at Dot's Market were seared in a cast iron frying pan for about 4 minutes per side and taste a little like pork chops, a little like bacon and a lot like ham.  The single leftover was trimmed from the bone, reheated and placed on a brioche bun for a special lunch treat.
